Frosted Pumpkin Spice Cookies
1 cup butter (227 g)
1 ¼ cup sugar (250g)
1 egg
1 ½ cup mashed/cooked pumpkin puree (NOT pumpkin pie mix)
1 tsp baking soda
½ tsp salt
3 ½ cups flour (438g)
Pumpkin pie spice to taste
¼ tsp nutmeg
1 tsp cinnamon
¾ tsp ginger
½ tsp cloves
½ tsp allspice
*** Play around with the spices! Add more or less depending on your tastes.
Preheat oven to 400 degrees (200c)
Cream butter with sugar. Add egg and mix well. Add pumpkin and stir until blended.
Sift all dry ingredients together and add to pumpkin mixture.
Drop by rounded teaspoonfuls onto greased cookie sheets.
Bake for 8-10 minutes, let cool completely. While cookies are baking, make the frosting.
For the frosting:
3 Tbsp butter
½ cup firmly packed brown sugar (100g)
¼ cup milk
2 cups powdered sugar (250g)
Combine butter and brown sugar in a saucepan and bring to a boil.
Cook on medium heat for 1 minute or until slightly thickened, stirring constantly. Remove from heat and let cool for 10 minutes.
Beat in milk until smooth, then slowly beat in enough powdered sugar until you get a nice spreading consistency.
*If you have leftover frosting, let it completely dry before storing.
Makes about 5 dozen cookies.
